Ingredients:
- 1 ¾ cups all purpose flour
- 1 tbsp. cornstarch
- 2 tsp. baking powder
- ½ tsp salt
- ½ cup vegetable oil or melted butter
- ½ cup sour cream room temp
- 1 cup sugar + 2 tbsp. Bee Sweet Citrus Orange zest
- 2 large eggs room temp
- 2 tbsp. Bee Sweet Citrus Orange juice room temp
- 1 tsp. Vanilla
- 1 ¼ cup cranberries
Directions:
- Whisk together the dry ingredients. Toss the cranberries in the dry ingredients.
- In another bowl, rub the orange zest into the sugar, then whisk in the oil and sour cream.
- Whisk in the eggs, orange juice, and vanilla.
- Add the dry ingredients to the wet. Fold. Do not over-mix.
- Pour into a prepared 8×4-inch loaf pan and bake for 45-55 minutes, or until a toothpick inserted in the middle comes out clean.
- Cover with foil if the tops are getting too brown.
- Cool and then whisk together 1 cup powdered sugar, 2 tbsp orange juice, and a splash of vanilla for the glaze.
- Pour over bread, slice & enjoy.
