Ingredients for Cupcakes
- 1 cup sugar
- 1 cup flour, spooned and leveled
- ¼ cup + 2 tbsp. cocoa
- ½ tsp. espresso powder
- 1 tsp. baking powder
- ¾ tsp. baking soda
- ½ tsp. salt
- 1 egg at room temperature
- ½ cup sour cream at room temperature, or buttermilk
- ¼ cup oil
- 1 tbsp. vanilla
- ½ cup boiling water
Ingredients for Royal Red Frosting
- ½ cup softened butter
- 8 oz. cream cheese
- 2 tbsp. Bee Sweet Citrus Royal Red Orange juice
- 3 cups powdered sugar
- Pinch of salt
Directions
- Whisk together dry ingredients.
- Mix the egg, sour cream, oil, and vanilla in another bowl until combined. Then, pour the mixture into the dry ingredients.
- Pour in water and mix.
- Stir and pour into the prepared muffin tin.
- Bake at 350F for 15-19 minutes.
- Allow to cool in the pan for about 5 minutes. Once cooled completely, beat together butter and cream cheese with a hand mixer.
- Add in powdered sugar, then the juice and salt.
- Pipe onto cupcakes and enjoy!
