Orange Cranberry Loaf

Ready In: 45 minutes  Serves: 5-6 People

Ingredients:

  • 1 ¾ cups all purpose flour
  • 1 tbsp. cornstarch
  • 2 tsp. baking powder
  • ½ tsp salt
  • ½ cup vegetable oil or melted butter
  • ½ cup sour cream room temp
  • 1 cup sugar + 2 tbsp. Bee Sweet Citrus Orange zest
  • 2 large eggs  room temp
  • 2 tbsp. Bee Sweet Citrus Orange juice room temp
  • 1 tsp. Vanilla
  • 1 ¼ cup cranberries

Directions:

  1. Whisk together the dry ingredients. Toss the cranberries in the dry ingredients.
  2. In another bowl, rub the orange zest into the sugar, then whisk in the oil and sour cream.
  3. Whisk in the eggs, orange juice, and vanilla.
  4. Add the dry ingredients to the wet. Fold. Do not over-mix.
  5. Pour into a prepared 8×4-inch loaf pan and bake for 45-55 minutes, or until a toothpick inserted in the middle comes out clean.
  6. Cover with foil if the tops are getting too brown.
  7. Cool and then whisk together 1 cup powdered sugar, 2 tbsp orange juice, and a splash of vanilla for the glaze.
  8. Pour over bread, slice & enjoy.
