Chocolate Cupcakes with Royal Red Frosting

Ingredients for Cupcakes

  • 1 cup sugar
  • 1 cup flour, spooned and leveled
  • ¼ cup + 2 tbsp. cocoa
  • ½ tsp. espresso powder
  • 1 tsp. baking powder
  • ¾ tsp. baking soda
  • ½ tsp. salt
  • 1 egg at room temperature
  • ½ cup sour cream at room temperature, or buttermilk
  • ¼ cup oil
  • 1 tbsp. vanilla 
  • ½ cup boiling water

Ingredients for Royal Red Frosting

  • ½ cup softened butter
  • 8 oz. cream cheese
  • 2 tbsp. Bee Sweet Citrus Royal Red Orange juice
  • 3 cups powdered sugar
  • Pinch of salt

Directions

  1. Whisk together dry ingredients.
  2. Mix the egg, sour cream, oil, and vanilla in another bowl until combined. Then, pour the mixture into the dry ingredients.
  3. Pour in water and mix.
  4. Stir and pour into the prepared muffin tin.
  5. Bake at 350F for 15-19 minutes.
  6. Allow to cool in the pan for about 5 minutes. Once cooled completely, beat together butter and cream cheese with a hand mixer.
  7. Add in powdered sugar, then the juice and salt.
  8. Pipe onto cupcakes and enjoy!
