  • 2 tsp Bee Sweet Meyer Lemon juice
  • 1 ¼ cups rolled oats
  • 1 teaspoon vanilla extract
  • 1 teaspoon powdered sugar (optional)
  • ¾ cups sweetened coconut flakes
  • ½ cups chopped almonds (or nut of your choice)
  • ½ cups peanut butter
  • 1/3 cups honey (or maple syrup)
  • ¼ cups chia seeds
  • ¼ teaspoon salt


In a medium-sized bowl, mix together dry ingredients and set aside. Then, place the wet ingredients together in a small pan. With the heat on low, mix everything together until a nice, smooth consistency has formed.

Next, bring the dry and wet ingredients together and mix it all well.

Prepare a squared baking dish with parchment paper, and pour in the ingredients. Once the mixture is nice and flat, place it in the refrigerator overnight.

Once the mixture has had time to sit, use a knife to cut pieces according to your liking.

Sprinkle with powdered sugar, and enjoy!

*** Please note that you can also place the mixture in the freezer, but be sure to check the consistency of the bars every few hours to prevent them from hardening too much.

*** If Meyer Lemons aren’t in season, feel free to use 1 tsp of a regular lemon juice.
