Ingredients

  • 1 ¾ cup all purpose flour
  • 1 ½ tablespoons poppy seeds
  • ½ teaspoon salt
  • 2 large eggs
  • 1/3 cup non-fat Greek yogurt (plain)
  • 1 teaspoon vanilla extract
  • 1 Meyer lemon (1/2 squeezed) (regular lemon varieties work too)
  • ¾ cups granulated sugar
  • 1/3 cup almond milk
  • 1 teaspoon baking powder
  • 1/3 cup vegetable oil

Directions

  1. Preheat oven to 350 degrees Fahrenheit and line a muffin tin with 12 paper cups
  2. Add sugar, flour, poppy seeds, baking powder and salt in a bowl. Mix together.
  3. Zest ½ lemon, and add juice into mixture
  4. In a separate bowl, whisk eggs and add in vegetable oil, yogurt, mile and vanilla extract
  5. Mix wet and dry ingredients together (be careful not to over mix)
  6. Bake for 18-20 minutes

Muffin Icing

  1. Squeeze juice of other lemon half
  2. Mix juice with ½ powdered sugar
  3. Drizzle over muffins
