Ingredients:

  • 1/3 cup light brown sugar
  • 1/3 cup freshly squeezed orange juice from one Bee Sweet Citrus Navel Orange
  • ½ cup granulated sugar
  • ½ tsp salt
  • ½ cup milk
  • ½ cup unsalted butter (melted)
  • ¾ cups oatmeal
  • 1 tsp cinnamon
  • 1 ¼ cups fresh cranberries
  • 1 ½ tsp baking powder
  • 1 ½ tsp vanilla extract
  • 2 large eggs
  • 2 cups all-purpose flour
  • Zest from one medium Bee Sweet Citrus Navel Orange

Directions:

  • Preheat oven to 350 degrees Fahrenheit
  • Line a 12-cup muffin pan with cupcake liners
  • In a large bowl, mix the dry ingredients together (without the cranberries)
  • In a second bowl, whisk together the wet ingredients
  • Pour the wet ingredients into the bowl with the dry ingredients and mix until everything is combined (the batter may be slightly lumpy, and that’s okay)
  • Gently fold in the cranberries
  • Evenly distribute the batter into the cupcake liners
  • Bake for 23-25 minutes, or until a toothpick is inserted in the batter and comes out clean
  • Let muffins cool and enjoy!
