Ingredients:
- 1/3 cup light brown sugar
- 1/3 cup freshly squeezed orange juice from one Bee Sweet Citrus Navel Orange
- ½ cup granulated sugar
- ½ tsp salt
- ½ cup milk
- ½ cup unsalted butter (melted)
- ¾ cups oatmeal
- 1 tsp cinnamon
- 1 ¼ cups fresh cranberries
- 1 ½ tsp baking powder
- 1 ½ tsp vanilla extract
- 2 large eggs
- 2 cups all-purpose flour
- Zest from one medium Bee Sweet Citrus Navel Orange
Directions:
- Preheat oven to 350 degrees Fahrenheit
- Line a 12-cup muffin pan with cupcake liners
- In a large bowl, mix the dry ingredients together (without the cranberries)
- In a second bowl, whisk together the wet ingredients
- Pour the wet ingredients into the bowl with the dry ingredients and mix until everything is combined (the batter may be slightly lumpy, and that’s okay)
- Gently fold in the cranberries
- Evenly distribute the batter into the cupcake liners
- Bake for 23-25 minutes, or until a toothpick is inserted in the batter and comes out clean
